I have tried almost any kind of critter you can kill in the area. People who say bear is gamey and fatty are nuts. If your bear steak is bigger than about 3 incher across or has any white on it throw it out. It was not cut up right. Cat is great bobcat and lion are both great. beaver roasted in the barbecue, and the tail fried is great. Coon in a crock pot with homemade bbq sauce is the best sandwich you can have. Many people just don't know how to clen and prepare a deer let alone a bear or a beaver.
