I don't often fish for salmon, but when I do I catch 40 lb kings.

Thats a size 11 shoe for reference. The second fish broke the net.

Farmed salmon here in Yookay costs around $11 for 600gr -that's just over a pound weight...........................................natural salmon is not available in the waters around this part of Yoorup.
 
The piece I'm holding is truly impressive. When I fillet salmon I cut down the midline to the spine and then down the length to the tail. This separates the top half from the bottom half. The thicknesses between the top and bottom halves are so different it's impossible to cook properly, so filleting from the midline up and down creates better uniformity.

So the piece I'm holding is from the top half. That's just 1/5 of one side of the top half. The thickness was amazing.
