Build yourself one, currently building a "plain Jane", if I can control myself it ought to come in under 500 (if you count my labor it'll be a $1000 gun). Foster/Caspian (race ready) frame, basic parts from Sarco, GI type slide, standard controls, I'll start a thread when I get the parts together.

Keep your eyes open, don't get impatient, and a deal will come your way. I currently cruise 3 gun forums, there are deals to be had.
 
Another thought, one I've not seen mentioned yet.
Buy a used Colt. I've seen a handful recently for the $700 mark... Most are Series 80 guns, which I don't prefer, but are still great guns.
FYI, and not just my opinion, Kimbers are very pretty, but quality can be iffy and my experience with their Customer Service leaves much to be desired.

I agree, look for a used Colt.
