Just get a Glock 19 and be done with it.

Commonality is a good thing to practice.

Same controls. All sizes, models and calibers.

Now to truly appreciate the Glock platform. You need to go buy a Beretta 92f first.
You need the exposure to a double/single action trigger. And a stupid slide mounted safety/decocker.
[I have two]

Your gona encounter these controls on other guns. So you should learn them.

After this the simplicity of the Glock will be like a breath of fresh air!
And you will be able to operate almost any handgun in a pinch. ;)

Warning: Do not handle or even try to understand the HK P7. :D

I would recommend any full size striker fired pistol. Glock, Smith and Wesson M&P, Springfield XD or XDM, etc. i would not recommend a 1911 as a first pistol. They are wonderful, but the manual of arms is a bit more compliicated. Go to a gun store and handle them. See what feels best in your hand. Then take a defensive pistol class, not just one that satisfies the requirements for a CHL.
