Boy, you opened a huge can-o-worms both with caliber and guns.
I will give you my opinions.
Round receiver guns are cheap to manufacture, book keepers love them.
I prefer guns with integral recoil lugs Winchester model 70's (pre or post 64), commercial mausers (there were quite a few over the years), weatherby mk v's. There are likely more that I can't recall right now.
Barrel type is also important, button, broach or hammer forged rifling. I prefer hammer forged.
A nicely bedded wood or a composite stock will work as long as it is fitted right. Plastic sucks, sorry ramline fans.
As far as caliber goes anything from 243 through 30/06 will suffice for deer.

Well that's enough to rile up some folks, but these are opinions based on 50 years of experience.
