On ribs and chicken, don't pass up the chance to use a maple and cherry combo either.
About 1/3 maple and 2/3rds cherry.

Yes this is a big frustration for me. So far i'm less than thrilled with my traeger especially in winter.This makes all the difference - cold days are harder to keep temps level.

And if you have a Mav (or similar)......it makes fire control soo much easier.Yea, an insulating blanket would be great as well as shelter from wind and rain if possible will make a huge difference.
I have to keep mine (charcoal) downstairs in front of the garage with a concrete wall blocking the wind and an overhead porch protecting it to cook in the winter. Takes more fuel and more frequent check on temps.

Took me an entire summer to crack the code on Gartner's Marinated Beef Short Ribs.
It is a very unique flavor and closely guarded recipe.....
3 minutes per side and bam! you're eatin' ribs !
