I didn't know anybody in Texas that would eat an alligator gar, lots of bones and and a bit gamey I heard. But if you're hungry I bet it's dandy! late edit: need to hear from any Cajuns in the house, if there's a good recipe they got it.

On the other hand, a fish that big would have ... big bones not the tiny splinter ones :)

What's even better, they will not eat YOU if you are in the water ... as opposed to a regular reptile alligator ....

Gar are actually pretty good to eat.
But it is a lot of work to clean them.
Also you don't want to eat or have any of the eggs or any slime or whatever anything to do with the eggs on the meat.
Must be clean of anything to do with the eggs.
Deep fried like chicken.
The meat is good.
The eggs or the sain or slime on the eggs will make you sick.
Like have TO GO TO THE HOSPITAL SICK.

Sorry for the late response, and WOW that was not part of my knowledge base. Just "don't eat gar" was the message ... you get these rules and the factors involved may not be explained – well that applies to everything.
