I freeze fish overnight before I vacuum pack. Cut to size, put them on waxed paper, freeze, then package. Be sure to poke a hole in the bag prior to thawing. Thawing under a vacuum pulls moisture from the flesh. No vacuum leads to firmer flesh. Applies to deer and elk, too.

Read the package on frozen herring. It says the same thing. Doesn't mention deer or elk though.

If you can't catch your own, next time you are in Cannon Beach go here and order the salmon fish & chips dinner. Sooooo good!

Thanks for the info. Caveman has eaten salmon just once in a restaurant 40 years ago. I did buy steelhead to make steelhead candy (deep fried to perfection) for my son 2 years ago since the runs are so bad here.
Generally I always have fish.
