I've had closed ones for many months, to me they were still good. Opened, I found one in the bottom of my ruck, time unknown a bit dry, for me still usable.

I never thought about cold brew coffee I should check that out.

I'm not much of a true prepper so I don't know what coffee has to do with SHTF but I suppose if the big Cascadia quake happens and I'm stuck camping in my backyard for 6 months waiting for FEMA to arrive some nicely brewed java in the mornings will definitely lift up the mood and that has to be worth something for long term survival.
