Reasonable amount of food to store?

I went pretty big on food buying when the lockdowns happened, I have since went back down to normal plus, I am just about to complete a home remodel though with a nice shiny pantry room that will need some shelves stocked. I like to have plenty but not so much that the dates will go bad.

I have a year for a family of 4 and a spare room to store it, 80% of my stuff is freeze dried, I own a freeze dryer so it makes it very affordable and shelf stable, I rotate through some items as they are more convenient to eat than making something
My thoughts are we don't know what other people will be in need or have something to trade... also with price increases I can be more efficient with what I buy owning a freeze dryer.
