In light of the fact that my wife and I are both stuck at home at this point, we've got a lot of time available not far from the kitchen.

So, let's see some of your best and more complex recipes...'cause hell, I've got the time.

I'll get this ball rolling with...Pulled Pork Sliders w/ Baked Beans and Slaw

PULLED PORK
BRINE
4 Cups Apple Juice​
2 Cups Water, Ice​
1 Cup Brown Sugar, Kosher Salt​
Small Handful fresh thyme, rosemary, toasted black peppercorns​
1 Lemon, Orange, juiced and tossed in​
==> Soak a bone-in pork shoulder for 12 hours-ish​
SMOKE
Dry off the pork and coat in Kosher Salt, Save the brine​
==> Applewood Smoke until done, mopping hourly with brine. I'm a fan of smoking at 250F with the fat cap on top.​
==> When done, remove fat cap and bone and freeze for use in making broth. Shred meat.​
BAKED BEANS
SAUCE
3 TblSp molasses​
1 TblSp Worcestershire​
1/2 Cup Smoked Ketchup (I like Red Duck Smoky Ketchup)​
1/4 Cup Brown Sugar​
Salt, Peppar, Dry Mustard to taste​
==> I usually use 2x this amount, how much or little you use is your call​
==> Heat to a simmer and adjust as needed for taste​
BACON AND BEANS
2lbs Thick Sliced Bacon, Diced​
1 Sweet Yellow Onion, Diced​
==> Fry the bacon, remove and set aside​
==> Fry the onion in the bacon fat, remove and set aside​
2 Cups Navy Beans, soaked overnight​
Beef Broth​
==> Simmer beans in Beef Broth for an hour or two​
BAKED BEANS
==> Layer beans, bacon, onion, and sauce in a baking dish​
==> Add the beef-broth-bean-water from the cooked beans as needed to soak everything in the baking dish​
==> Bake covered at 325F for 3 to 4 hours. Check halfway through and add more beef-broth-bean-water if needed.​
SLAW
SAUCE - MAYO
1 Egg Yolk + 1 Whole Egg​
1 TblSp Dijon, White Wine Vinegar, Fresh Lemon Juice​
1 Cup Extra Virgin Olive Oil​
==> Whisk everything except the Oil together​
==> Slowly whisk in the Oil. Very slowly. Don't mess this up.​
==> Add extra vinegar, lemon juice, salt, and/or dijon to taste​
SAUCE - SLAW SAUCE
1/2 Cup Mayo (made from above)​
1/2 Cup Sour Cream​
2 TblSp White Wine Vinegar​
1 TeaSp White Sugar​
==> Mix all ingredients. Salt, pepper, extra vinegar and/or sugar to taste​
==> Set to Side​
VEGGIES
Green Cabbage, Red Cabbage​
Carrot​
White Onion​
==> Julienne all veggies​
==> Combine to ratio however you see fit. I like 2:1 cabbage to carrot/onion.​
And there you have it.

I highly recommend grabbing a slider bun and adding some pulled pork, a bit of a vinegar based barbecue sauce, a small handful of slaw veggies, a tablespoon of slaw sauce. Everything together is damn near heaven on earth. Add a side of baked beans and pair with your favorite bourbon.

I'll save my caramel bourbon ice cream recipe for another post.

The pork brine takes about 15 minutes to get going and the cooking just requires you to check it hourly.
The slaw takes about 30 minutes to get everything together and can then be set aside.
The beans take about 30 minutes to prep, layer, and get in the oven.

Times may take a bit longer if you can't multitask in the kitchen. But, overall, it's not a heck of a lot of active time for all the food, making it a pretty good meal to do while having other stuff to do.

How about you guys? What's your go-to for bigger super tasty meals?
 
I've just been doing beef roasts in a crockpot with carrots, onion, garlic, dried Italian seasoning cuz I'm lazy, potatoes, celery, parsnips and turnips.

Add some water and beef bullion to the bottom and put the roast on top of the veggies then fill the sides with more veggies.

Salt the top of the roast liberally (sear it first on a hot skillet.

Start it on high for an hour then down to low for the rest of the day (maybe 6 hours).

Simple and loads of leftovers so I don't have to cook again for a couple days.


I've done super complicated but find as I get older the simple stuff tastes just as good and is a lot less work - sometimes less is more.

Then I have plenty of time to sit out back and have a couple cigars:D;)

Dangerously Good Cookies (Chocolate Chip, Oatmeal, Walnut, & Peanut Butter)


Step 1

In the mixing bowl (at low-medium speed), cream together:


1/2 cup of shortening

1/2 cup of softened butter

1/4 cup of peanut butter

2 eggs

1 teaspoon of vanilla

1/2 cup of sugar

1/2 cup of brown sugar


Step 2

In a separate bowl, whisk together:


1 1/2 cups of flour

1 teaspoon of baking soda

1/2 teaspoon of salt


Step 3

With the mixer slowly running, add the dry ingredients to the sugary stuff in the mixing bowl.


Step 4

With mixer running at low speed, gradually add:

2 cups of rolled oats

1 cup of chopped walnuts

24 ounces of chocolate chips



Step 5

Put balls of cookie dough onto baking trays. (Use baking parchment if you have it.)

Bake at 375 degrees for 10 to 12 minutes.



Step 6

Take the cookies out of the oven, and put them onto cooling racks. They won't have spread out very far, and will be soft in the middle. Pour yourself some ice-cold milk.



Step 7

Get fat and happy.

Microwave 38 seconds high
flop onto bun
squeeze mustard on top ( NO ketchup per Dirty Harry )
Lay's potato chips ( you can omit this if your on a diet)

I, however, can't bake to save my life. I made PB cookies for the first time since Home-Eq last week and managed to not screw it up. I'm going to have to try out your recipe - sounds good. Wish me luck! If an oven is involved, I generally need it.

Turnips cook a little faster then a potato so cut them larger;)

That and parsnips are awesome additions to the veggies.

Mellow taste and most people don't eat them for some reason ;)
 
Funny the OP talks about navy beans- I literally just put 2 lbs to soaking like 10 min ago. No pulled pork, this is just beans, and unless I have a meat hunk or bone to add, I like to use this Hemplers peppery bacon, like half a pack (cook whole pack, just nibble on the other half pack, lol).
 
Look up Carne Guisada. Lots of recipes. Find one that you like.
Use beef or elk.

We make tacos the first meal with it and then burritos with leftovers.

Use your crock pot. Put it on when you leave for work. It'll be ready when you come home.

You can thank me later.
 
How to make crab-topped English muffins:

Toast some English muffins and arrange on a foil-lined cookie sheet

In a bowl combine crab meat, sautéed mushrooms, green onions, and Swiss cheese. Add mayo as a binding agent.

Bake at 350F for 20 minutes, then broil for 3-4 minutes

The Rockford Enchilada...

A regular can of frijoles refritos.

6 or 7 flour tortillas

About half a (small tin) of green chiles.

Hand full or two of MoJack or Cojack evenly dispersed between interior and exterior (Member quotes disqualified).

Roll 'em up and douse with a big tin of red or green enchilada sause.

Makes about 6 or 7 and cook at 350 for about 45 minutes or about an episode of the Rockford Files.

Possible additions:

Olives, onion, nopales, jalapnos and cottage cheese works well also.

Kimchi and some spam/hotdogs (cooked) if you want to go all Oriental.

Kielbasa (cooked) and some boiled cabbage and potato if you want to go full stupid and create the Mexican Pierogi.....
