In light of the fact that my wife and I are both stuck at home at this point, we've got a lot of time available not far from the kitchen.
So, let's see some of your best and more complex recipes...'cause hell, I've got the time.
I'll get this ball rolling with...Pulled Pork Sliders w/ Baked Beans and Slaw
PULLED PORK
I highly recommend grabbing a slider bun and adding some pulled pork, a bit of a vinegar based barbecue sauce, a small handful of slaw veggies, a tablespoon of slaw sauce. Everything together is damn near heaven on earth. Add a side of baked beans and pair with your favorite bourbon.
I'll save my caramel bourbon ice cream recipe for another post.
The pork brine takes about 15 minutes to get going and the cooking just requires you to check it hourly.
The slaw takes about 30 minutes to get everything together and can then be set aside.
The beans take about 30 minutes to prep, layer, and get in the oven.
Times may take a bit longer if you can't multitask in the kitchen. But, overall, it's not a heck of a lot of active time for all the food, making it a pretty good meal to do while having other stuff to do.

PULLED PORK
BRINE
4 Cups Apple Juice
2 Cups Water, Ice
1 Cup Brown Sugar, Kosher Salt
Small Handful fresh thyme, rosemary, toasted black peppercorns
1 Lemon, Orange, juiced and tossed in
==> Soak a bone-in pork shoulder for 12 hours-ish
SMOKE
Dry off the pork and coat in Kosher Salt, Save the brine
==> Applewood Smoke until done, mopping hourly with brine. I'm a fan of smoking at 250F with the fat cap on top.
==> When done, remove fat cap and bone and freeze for use in making broth. Shred meat.
BAKED BEANSSAUCE
3 TblSp molasses
1 TblSp Worcestershire
1/2 Cup Smoked Ketchup (I like Red Duck Smoky Ketchup)
1/4 Cup Brown Sugar
Salt, Peppar, Dry Mustard to taste
==> I usually use 2x this amount, how much or little you use is your call
==> Heat to a simmer and adjust as needed for taste
BACON AND BEANS
2lbs Thick Sliced Bacon, Diced
1 Sweet Yellow Onion, Diced
==> Fry the bacon, remove and set aside
==> Fry the onion in the bacon fat, remove and set aside
2 Cups Navy Beans, soaked overnight
Beef Broth
==> Simmer beans in Beef Broth for an hour or two
BAKED BEANS
==> Layer beans, bacon, onion, and sauce in a baking dish
==> Add the beef-broth-bean-water from the cooked beans as needed to soak everything in the baking dish
==> Bake covered at 325F for 3 to 4 hours. Check halfway through and add more beef-broth-bean-water if needed.
SLAWSAUCE - MAYO
1 Egg Yolk + 1 Whole Egg
1 TblSp Dijon, White Wine Vinegar, Fresh Lemon Juice
1 Cup Extra Virgin Olive Oil
==> Whisk everything except the Oil together
==> Slowly whisk in the Oil. Very slowly. Don't mess this up.
==> Add extra vinegar, lemon juice, salt, and/or dijon to taste
SAUCE - SLAW SAUCE
1/2 Cup Mayo (made from above)
1/2 Cup Sour Cream
2 TblSp White Wine Vinegar
1 TeaSp White Sugar
==> Mix all ingredients. Salt, pepper, extra vinegar and/or sugar to taste
==> Set to Side
VEGGIES
Green Cabbage, Red Cabbage
Carrot
White Onion
==> Julienne all veggies
==> Combine to ratio however you see fit. I like 2:1 cabbage to carrot/onion.
