I sharpened our axe and hatchet by hand. I used a file and some sand paper. It is a good skill to learn and helps you to respect your tool and keep it in good condition.
I use a file to redress an axe edge, and a puck to sharpen. No honing or polishing.
For tools that benefit from a fine polish [plane irons, chisels, gouges, spoon carving knife, etc.], I probably stop 10-12 to strop the edge before it gets so dull that I have to hone on the wetstones. And it would take a lot of work sessions to work the bevel back to where it needed to be redressed on the belt grinder or Tormek.
