I have a "Smith's precision sharpening kit" that has served me very well for years. This sharpener works on 20 & 25 degree angles. It works great on our pocket & hunting knives, and most of our kitchen knives. We recently purchased some kitchen knives that have an 11 degree angle. I need help finding a good sharpener for these knives.

I'm not very good at holding an angle. I'm getting allot better at it, but I don't feel comfortable "practicing" on a knife that cost $200+! I would like something that will keep me at 11 degrees.

Keep practicing! Buy old knives from the Goodwill and put edges on them...it'll take a little time, but pretty soon holding that specific angle you want will become second nature!
