Under $10 for enough for a family of 4 to eat for 2 days

One Pork Roast, $3 (Costco)
2 cup of leftover (cooked)beans $1
2 cans diced tomato's $1.50
1 can tomato sauce
Mexican spices of your choice$0.50

Put everything in the crockpot of low until the pork is flaky
Pull out the Pork roast. Pull out 1 cup of sauce for rice. Flake the roast into bite size portions and mix back into crockpot and heat for another 1/2 hour.

1 and 1/2 cups rice $1

Cook 1 and 1/2 cups rice, mix in the 1 cup of sauce you reserved earlier, ad salt and pepper to taste, add 1/2 cup chopped Cilantro and mix together.

Serve the pork on top of the rice
 
Mmmmmm! You've inspired me. I'll have to pull out my pulled pork recipe and make some BBQ pulled pork sandwiches and some pulled pork enchiladas Verde. I cook the pork in a crockpot for for 8-10 hours until it just falls apart.
