I use a pizza stone in my old Oregon Traeger. 425˙ or hotter for pizza. Want to throw a bubbly brown on those. I actually use store bought frozen pizza dough and it works great.
 
As much as people dog on traeger, mine works really well. I will say, i only bought it because i got a 50% off coupon. Otherwise i was looking at a green mountain grill due to not wanting to spend over 6 or 700 dollars.
Malcom reed is good. i also watch a lot of bbq with franklin. Everything ive done his way has been delish.

I am interested in an offset pellet smoker and grill. Of course Traeger was the first brand to come to mind, but it sounds like other brands are better made. I have a propane gas grill, but am new to smoking. Any recommendations for an idiot proof medium sized smoker / grill?
 
First, get yourself educated about pellet grills (they're smokers, not grills really).
I would avoid the simple controllers that come on the cheaper pellet smokers.

I personally have a Pit Boss. https://pitboss-grills.com/wood-pellet/ It's pretty idiot proof and has a built in thermometer. Less than half the cost of a Traeger
