My wife found this in a cookbook at Goodwill. They are the best Lemon Cookies I've ever had - the lemon flavor is fabulous but not too tart. I think it is the combination of lemon zest, fresh lemon juice, and lemon oil.

Ingredients
- 2 cups sugar
- 1 cup unsalted butter, softened
- 1/2 teaspoon lemon zest
- 2 large eggs
- 1 1/2 teaspoon vanilla extract
- 1 teaspoon lemon oil
- 4 cups all-purpose flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup fresh lemon juice
- 1 cup powdered sugar
Preparation
- Preheat oven to 350F.
- Beat sugar, butter, and lemon zest at medium speed with an electric mixer until light and fluffy. Add eggs, vanilla, and lemon oil. Beat at low speed until blended.
- Sift together flour, baking soda, and salt. Add to butter mixture alternately with lemon juice, beginning and ending with flour mixture.
- Scoop dough by tablespoonfuls and shape into balls. Roll balls in powdered sugar. Place balls 2 inches apart on lightly greased cookie sheets.
- Bake for 16-18 minutes (14 minutes in a convection oven) or just until cookies begin to brown (cookies should be soft in the middle).
- Cool on baking sheets for 2 minutes. Transfer to wire racks.
