My wife found this in a cookbook at Goodwill. They are the best Lemon Cookies I've ever had - the lemon flavor is fabulous but not too tart. I think it is the combination of lemon zest, fresh lemon juice, and lemon oil.

Recipe from the Boulevard Bread Company in Arkansas. Makes 3-4 dozen cookies.

Ingredients
  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 1/2 teaspoon lemon zest
  • 2 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon oil
  • 4 cups all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup fresh lemon juice
  • 1 cup powdered sugar

Preparation
  1. Preheat oven to 350F.
  2. Beat sugar, butter, and lemon zest at medium speed with an electric mixer until light and fluffy. Add eggs, vanilla, and lemon oil. Beat at low speed until blended.
  3. Sift together flour, baking soda, and salt. Add to butter mixture alternately with lemon juice, beginning and ending with flour mixture.
  4. Scoop dough by tablespoonfuls and shape into balls. Roll balls in powdered sugar. Place balls 2 inches apart on lightly greased cookie sheets.
  5. Bake for 16-18 minutes (14 minutes in a convection oven) or just until cookies begin to brown (cookies should be soft in the middle).
  6. Cool on baking sheets for 2 minutes. Transfer to wire racks.
