- 2 cups sugar
- 1 cup water
- 2 large peaches or 3 small peaches, peeled, pitted, and quartered
- 2 tablespoons freshly-squeezed lemon juice
- 1 tablespoon Peach Schnapps
Preparation
- Combine the sugar and water in a small, stainless-steel pot. Cook over medium heat and whisking occasionally until the sugar has dissolved. Remove from heat and set aside.
- Prepare the peaches.
- Put the peaches in a blender with the lemon juice and puree thoroughly (30-45 seconds).
- Pour the peach puree into a large bowl or container and whisk in the sugar syrup.
- Place in refrigerator and chill completely (2 hours).
- Whisk in the Peach Schnapps.
- Pour the mixture into an ice-cream maker and process according to manufacturer's directions. Use a rubber spatula to transfer the sorbet to an airtight glass or plastic freezer container. Cover tightly and free until the sorbet is firm (at least 4 hours).
