I was looking at the Covert lineup but they (and some other kimber models) don't have the left handed thumb safety, is this something you can install fairly easy?

any thumb safety has to be 'fitted' on install. Some will go smoother than others. A competant smith can do this, or if you feel up to it, you could yourself.

You will not find a Covert with Left Handed Thumb Safety because this model gun has the crimson trace. On Crimson Trace, the right side safety (for lefty's) is not present to accomodate the laser beam.

Unfortunately, if you want that model, you will have to live with the Safety being only single sided and it's going to be on the left side of the gun.
