AR10 build possible issues

I purchased an 80% AR10 lower from American Made Tactical and a complete 6.5CM upper from Aero Precision. Since the AP upper is high profile, will I run into issues with a standard DPMS Gen 1 lower?

No, the high profile issue would only be related to the upper and the handguard.
Since you have a complete upper. You are good to go.

Good choice not using the AMT upper, they don't have feed ramps machined into them, and they don't mention that fact either.
