Other than the SE being available in 1-8, the venom being the newer option with bigger turrets, and about $100 in price, what are the actual differences between these LPVOs?

I've been looking at these since there are deals on them, I like the reticle, and Vortex has a great warranty. But for all of my internet scouring, I can't seem to find anything that helps make one or the other a definitive buy.

I've researched this before and the consensus is that the Venom is an all around superior scope to the Strike Eagle when it comes to the LPVO variants.
 
I also recommend watching this video comparing a wide range of budget LPVOs (including the Venom); probably the best resource you'll get regarding the topic of budget LPVOs.
I've watched quite a few, including the one you linked above which was probably the most helpful and even a video from Vortex themselves. They still frame it like the venom is below the SE in product stack and don't really compare them which is very annoying for a video intending to do that.

I think I'll go with the venom from everything I've heard, plus it has better FOV. Too bad they aren't on as good of sales as the SE w/mount are at the moment.

Yeah their marketing just adds to the confusion unfortunately, but by most accounts the Venom lineup is below the Strike Eagle, except when it comes to the LPVOs.
 
C_DOES is the best source for optics reviews, and he always does side-by-side comparisons for the final portion of the video. In this Venom review, he does compare it next to the SE. If you're not sold on the venom then watch his video on the SE as well. I watched his video on the SE 1-8x and it's not worth getting IMO, the image is very bad at 8x and I would definitely recommend the SE 1-6x instead. That being said, I think I would prefer the venom over either of the strike eagles. And if you're military or first responder, I believe vortex does 40% off MSRP.

C_DOES was one of the videos that I watched when researching. Found a deal for a Venom and went with that.
