I feel your pain, sort of anyway. I bought "stuff" because dimslee and turd ferguson didn't want me to. Now I've got "stuff", and the ammo to feed my "stuff". Thing is, I get more joy from my wood and blued .22s.
As for the OP, it's a strictly personal choice. I've got a couple dozen mags for my .223/5.56 stuff, 5 or 6 for my 6.5 GR and another 1/2 dozen or so for my .308. I feel like that's plenty for what I wanna do with them. As for keeping them loaded, I asked my gunsmith/ffl about the wisdom in that. His no-nonsense response was, "they ain't much use to ya when they're empty!"
 
Well since I don't have any ammo [or guns] it's easy to keep it all in the magazines I don't have.

Well, at least people are looking at older posts and not recreating the wheel every 6 months.

On the OP's topic, I keep at least 2 loaded mags per firearm. For my "SHTF" rifle I have 5. I don't see a lot of value in keeping more than that in "ready" condition. I don't trust mags to be reliable if they're kept loaded for extended periods of time. I will prep mags prior to a range trip, but that's with the expectation that they'll be fired soon.

However, needs change based on the environment one finds themselves in. If rule of law starts to deteriorate and I feel there is an increased need for greater preparation, loading mags doesn't take much time. So long as a person is attentive to changing conditions around their neighborhood, I think it is highly unlikely that a person will find themselves in a situation where 5 mags is inadequate and they don't have 10 minutes to load more.
 
I think any number of mags that makes you happy will suffice. Myself I prefer a mountain of ammo over a mountain of hardware.

My AR15's are working guns, meaning when they come out to play they get anywhere from 400-800 rounds through them in 6 hours. Ten, ten round mags work for my needs off a bench. I swap uppers and reload mags after every 100 rounds fired to help keep things cooled down.

My semi auto pistols have 4-8 mags per gun.

I don't have the cheddar to have unlimited mags, unlimited boxed storage for rounds, or any fancy way to keep rounds in small batches. My working AR's are the only set of guns that have 100 round ammo box's for rounds and ammo cans to transport them in. I have 60, 100 round box's that keep 6000 rounds ready for three different uppers. I have 6 ammo cans to transport a days worth of ammo for three uppers and three bolt guns. Each upper is marked with a color and every ammo box and can is color coded to match that upper. Since I hand load for all three uppers each box has load data, number of firings, etc.

All my pistol ammo is stored in large batches of 300+ in old bullet box's. I have a quantity of factory rounds in original box's but the bulk of my ammo is hand loaded. I have a few 50 round plastic box's for 40 cal and .223 that were given to me so I naturally use them. Besides those few pistol mags everything is stored not in a magazine.

As far as being worried about storing magazines loaded for any length of time, I have steel mags that have been continually loaded for 30-40 plus years and function just fine.

I will say though that if I had the money every round I owned would be in a magazine, stored in an ammo can, cans stacked wide and deep to form walls in my gun room palace.

Heck I can shoot 10 + rounds pretty quick....However my arms get tired quick too.....:D

All kidding aside....
I stand by first statements here...
Stock up on ammo and magazines...with the way things are going...no telling when yet another worthless ban or restriction is heading our way.
