In 2019 the Japanese probe Hayabusa 2 fired its space cannon into the Ryugu asteroid. Filming the destruction caused and then sending a mini probe over to it to gather the dust that was blasted off it.

Exactly, it was a blanket statement that said only if it hit the earth or moon would it stop. Many more celestial bodies out there then just the moon and earth.
Space is big, and there is a LOT of space between planets, suns and asteroids. The odds against a cannon projectile hitting any of those objects, if it was not specifically/intentionally aimed at them, would literally be astronomically.

What would stop the round unless it hit something.
Zero gravity in space is a myth. The reality is: there's a lot of gravity in space. You see weightlessness when spacecraft or the ISS is in orbit because they are moving so fast in orbit around earth that they are in a perpetual state of falling. If they were motionless around the earth they would be pulled into the atmosphere and fall. But instead satellites, spacecraft and the ISS orbits at 17,500MPH to maintain orbit without getting pulled in.

There are much larger gravity wells than earth out there...Like the sun, jupiter, etc. An object passing near any of those planets would get pulled off course and drawn into the gravity of those planets. It's that same gravity and high velocity that keeps the planets in orbit of the sun. So an object without thrusters to correct its trajectory would in fact get pulled off course by gravity if it passed anywhere near another planet, moon, asteroid, etc.
