I've seen a ton of info in fire forming 6.5 grendel from 7.62x39. here's my question, why can't you go the other way?

Because 1000 7.62x39 is like six cents.

Anneal, get a tapered expander, lots of lube and go slow and you should be fine.

But ... why in the heck would you want to do this considering the price differential between Grendel brass and 7.62 Russian?

Grendel resized easy enough.

You just want to go easy on the neck to avoid splitting when up-sizing.
