I've been using a kershaw fillet knife to butcher several elk/deer and perch-halibut-tuna and everything in between it's made in japan if you have to have a US made knife Dexter Russell makes quality knives I'd say they are very similar in quality if not better than kershaw

A very good choice indeed.
I have 3 fillet knives, from a small 4.5" Rapala cheapy, made in Finland, to an 8" Buck (Very expensive Made-in-USA one) that is a great knife, but hard to re-sharpen when it dulls, to a 10" Dexter-Russell.

The D-R seems to be the best compromise between easy to sharpen and holding an edge.
But to be honest, I wouldn't get rid of any of them. I use them all.
