I bought half a pig last fall. We gobbled down the bacon, sausage and ham. Then we were left with the rest which none of us really love. Trying to figure ways to eat the rest so tonight we are having pork chops in the crock pot cooked in cream of chicken soup. Pretty good.

If you've got some butt pieces, stuff with some good fat grain, make Carnitas. If you like Mexican food that is. Carnitas were traditionally made simmered in lard, so if you're not trying to eat extra lean the fat content is a good thing.

This is the recipe I loosely follow. The orange juice/skin and Mexican Coke make a difference I think.

I'm not sure if it's because I'm the one cooking it, but I've lost my taste for smoked pork. I've got a higher end smoker. I know how to do it. But I've lost my desire for it. I do like smoked chicken. Furthermore. I don't care for steak as much either these days. Move fish. Love chicken.

I will be 45 soon. Is it age and tastes change?

Reverse sear works for more then just pork chops too.
 
It's because you cooked it for yourself. 90% of the meals I prepare for us I think taste like garbage she only thinks it's around 50% :D There is some weird mental thing going on there though. If someone else makes something for you it often times tastes better.

Reverse searing is an outstanding way to perfectly cook thick chops and steaks.
Perfection, no over or underdone crud. And when you don't want to fire up the grill, easily done in a pan too.
The thermometer pictured in the article is the best one I've ever used.

You haven't had my wife's cooking? Though, what you say is absolutely true with the sandwiches Wifey makes when we fish.
