Nothing shapes quite like walnut. Cherry's nice but a bit harder. Oak smells like a dirty diaper. Hickory is too open grained. I've never worked with ebony but it's a mighty elegant looking wood.

I'd do walnut for my first project it's just so smooth and silky and carved like a dream.
 
During my hiatus from firearms, I developed a strong hobby in woodworking. The idea of building a firearm is very appealing to me (would have to find a gunsmith to do the metalwork for me)...and what better than a set of dueling pistols?

How about a 1911 made from that ebony you have?
