I just trim the fat off my steaks before grilling to avoid flare ups and freeze it for later. I add beef fat to ground deer or elk before cooking so the meat does not turn out too dry.
I went to one of my local grocery stores, a regional chain called Super 1 Foods and asked the butcher shop if they had any fat trimmings. They had a 40 lbs box of frozen tri tip fat they sold me for $0.98/lbs.
