For me, it depends on the pistol.

For myself and my wife, we use Hornaday Critical Defense 115 gr in her Sig P365 and my Kimber Micro 9.

For my Colt 2 1/2 inch Python if I'm carrying in town, I use Hornaday Critical Defens 125gr 357 mag.

The Hornaday rounds mentioned above all penetrate to 16 inches in gel after heavy clothing barrier and shouldn't over penetrate, even out of their respective short barrels. They all expand nicely. They also feed well in the micro pistols.

For my Beretta M9A3 and 93FS I will carry 9mm Corbon 115 FTX +P or Federal HST 124gr 9mm standard pressure or Winchester PDX Defender in 124 gr. They all expand well after heavy clothing in gel.

I also use the Federal HST in my Glock 19X, or Speer Gold dot 124gr +P.

For my 4 inch Kimber 1911 I use Federal HST 230gr +P or Winchester Ranger T series 230 gr or 175 gr +P.

And for my full size Colt 1911 I can use the same as the above along with the old Corbon Power Ball. Also the Federal Train and protect does well in gel after heavy clothing without over penetration. 230gr JHP.

Mostly Sig 180gr V-crown in the 10's these days. Handloads or Underwood 200gr hard cast in the woods.

9mm is mostly Double Tap 124gr super--wonder-whatever-the-flork they call it.

357 Mag is Sig 125gr V-crown.

44 Mag is Buffalo Bore 255gr hard cast.

I've been thinking about some Buffalo Bore Hard cast for my 357 for out in the woods. No need to worry about over penetration hiking in the woods.

I've not shot much of their 357. I only use that particular load in the 44 because it's run through a S&W 29-2 and I'm not interested in wearing it out with nuclear 300gr loads. The Buffalo Bore 255 replicates the Elmar Keith load and I can put all 6 rounds on an 8" plate in under 2.5 seconds. I've chronographed it at 1400fps through this gun.

Bullets. Cartridges, actually.

I'm as likely to need my gun against a critter as a human and I carry ammo I have faith in.
Currently in my 45 it's Black Talon, but I'd be just as comfortable with my XTP handloads.
357? Usually a 158gr JSP.
38 Special? 158gr SWC handload
380? Hardball. I want that little bugger to drive as deep as it can.
 
Ammo that goes bang when I request is a great start.

If I have to shoot you to save my life it will be with a HP and I'm accurate enough that I don't care who manufactured it as long as it is a reputable company.

Bullet technology has come so far since @Andy54Hawken 's time that I don't think it really matters.
