Isn't Pork Jerky just called Bacon?
Well, no. Big difference between Jerky and bacon.

Bacon is typically made from pork 'belly' cut, cured, cold smoked, yet still 'raw' intended to be fried.

Jerky is typically prepped in a liquid (or dry) brine mixture for a day or two then smoked until cured to a 'dry' finish.

We had company the other day. They needed help cutting up a deer for their family. I cooked one of their backstraps on the traeger for them to experience a good way to cook venison. (wife never ate deer before). We all enjoyed the tasty treat. The husband was all smiles when she loved the backstrap.
