One thing I would look for when shopping is pistols that use a mag that you can add those extensions too. Often those can make a HUGE difference to making a real small grip work better for large hands. Even if you can only get two fingers on the grip those nice little finger rest mag plates can make the shooting FAR easier without making carry and concealing harder.
 
The Springfield XDs 45 was surprisingly easy to shoot, same with the Sig938. The SW642 was miserable to shoot, same with the PPK and Keltec P3aT/Ruger LCP. Check out an all metal steel (no aluminum, titanium it lightweight alloys) snub revolver. The SIG 365 has a light recoil, but the trigger is kind of strange and more akin to a double action. I've heard good things about the SW Shield but have never shot one. The Glock26/27 is easy to control.
 
My glove size is XXL OR XXXL depending. I have been very happy with an original, small-sized P365. It took a bit to learn to shoot it well due to the size, but once that was learned it's served me well. As @spookshack has mentioned, you can swap grips very easily on this firearm. There are a number of after-market grips available, look at Mirzon, Icarus, Wilson Combat etc.

How have you been carrying? Gun and holster rig? I carry either a 4" 1911 or a Compact Beretta 92. Both are about the size of the Glock 19. I have in the past carried a Glock17 strong side OWB.
 
Regular HK P2000 is a nice "not too big, not too small" size. Might be worth checking out. I have regular man's glove size large hands and the SK models always feel a bit odd to me.

The Glock 48 is, surprisingly, more ergonomic in my opinion. It is not as comfortable as the G19, but useful when total concealment is most important.
 
I didn't care for the sleeved 12 round mag in a regular P365, it will leave a blood blister if you don't pay attention on a mag change.
I went with a 365XL grip instead with a Hogue grip sleeve several years ago.
All kinds of different stuff now for the 365 these days, another lego gun. All you need is the FCU and then build it any way you want.
I would like to get an Xmacro grip but I'm already invested in 12 round mags as it is.
And I have P229's if I want to carry that much ammo.

I have big hands, big enough I can palm a basketball. My IWB or pocket carry is a S&W 40 Shield with a 357 Sig barrel in it. OWB with an untucked shirt could be most anything up to a 5" 1911 or 4" GP-100.

How do you like that S&W 40 Shield? My uncle has one that he swears by, but I've already got the HK and was thinking a 9mm or possibly .38/.357. Not opposed to another .40, just want cheaper ammo haha!

I'm one of those that if a gun isn't right for me it goes on down the road. I've carried the Shield since they came out in 2012 or there abouts. To be honest this one is a gen 2 because of the better trigger. That being said It's my carry gun and I do shoot it quite often but it's not a range toy that I'll shoot all day. I'll run a mag or two thru it once a month or so but have other guns that are more fun to shoot. Nothing wrong with it and it shoots good and fairly accurate it's just small and not a target gun. I carry it as if my life might depend on it and for that it's just what I want.
Ah, just re-read and seen you have a .357 barrel in it. What's that like?

I really like the 357 Sig cartridge. A 124gr bullet out of a 3" barrel @ 1400 FPS is quite impressive. I call the Shield my Master Blaster. A couple other guns that I have in the 357 Sig are a Glock 32 and a Sig P-229.
