Why has the price on these things jumped more than $200 in the last two weeks? Is demand really that high?

Your Google-Fu is weak. See Saiga12.com. among others.

The std magazine is 5 rounds. There are factory 8 round magazines available, but rare. There are also US made 8, 10, and 12 round single stack magazines, as well as 12, 20 (and even impractically large 30) round drums too. A Saiga 12 will shoot 2 3/4" and 3" shells.
