If I want to buy a SBR upper for my existing rifle are you allowed to use both barrels/uppers after that? Let's say a 10.5" and currently installed 16" ...or is it now a SBR period?

After the Form 1 for your lower is approved and it is classified as an SBR, you can use whatever upper on it you wish. That is my understanding. If I'm wrong, I know someone will correct me shortly.

Edit: If you are asking if you can just buy a short barreled upper and make your rifle an SBR without any other paper work, @stickflickin is correct. You have to use a pistol lower with a brace.

Yes you can use any upper you want. If its PERMANENT change the ATF would like you to notify them of the change. AR upper barrel changes are seldom permanent though.
