Soaked overnight in a Cajun brine, dipped in egg and rolled in cornmeal, pan fried to crisp the outside then tossed in a Raspberry Chipotle sauce and baked in the oven for 20 minutes.

Mmmmm - interesting! How does the raspberry flavor come through? Very subtly or????

Yes it does, Raspberries and hot Peppers work extremely well together. I made this spicy but not overly hot as the rest of the family doesn't go for the burn like I do, the noobs!
 
OK just sat down and wrote the recipe

Raspberry Chipotle Chicken Wings
-------------------------------------
Brine

1/2 cup salt
1/2 cup brown sugar
1 tbs pepper
2 tbs Cajun seasoning
1/2 gal cold water


Add all the brine ingredients together and place chicken in brine and then in the fridge overnight

Raspberry Chipote Sauce

1 tbs olive oil
1/2 diced onion
2 cloves garlic chopped
2 chipotle chiles in adobo, chopped
2 pints fresh raspberries
1/4 cup apple cider vinegar
3/4 cup sugar
1/2 tsp salt

In a pan, heat oil over med-hi heat. Add onions and cook, stir until soft and slightly caramelized 4 minutes. Add garlic to the pan and saute for 1 minute. Add chipotle chiles stirring continuously for 1 minute. Add raspberries and cook until soft, 2 to 3 minutes. Add vinegar and stir to deglaze the pan. Add sugar and salt, and bring to a boil.

Reduce the heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes. Cool before using.

Chicken

1 bag Chicken wings
2 eggs whipped
2 cups corn meal
1/2 cup flour
Cajun spice to taste
Salt to taste
Pepper to taste

Take chicken out of brine and rinse off chicken.

I place the chicken on a rack and let it air dry for an hour.

When chicken is dry put chicken in a lg mixing bowl and throw the flour on and mix until all pieces are coated with flour

Mix cornmeal with spices

Dip dried and floured chicken into the egg and then roll in the corn meal mix

Fry the wings in 350 degree oil for 4 mins, this is just to brown and crisp the skin.

Put half your Rasp/Chipo sauce into a lg mixing bowl and then add your wings and pour the rest over the top.

Mix this until all wings are coated

Spread wings onto a cookie sheet and bake at 350 degrees for 20 mins

Eat
