I was a custom knifemaker for 14 years and a voting member of the Guild.

Mark, I just ordered one of the Lansky professional sharpening kits. What angle do you recommend for an EDC knife? Do the instructions that come with the Lansky give suggestions?
 
For me, it depends largely on blade thickness and use. On my EDC Kershaw Leek (about 1/16" blade), I use the 20 degree on my Lansky. On my EDC Kershaw Shallot (closer to 1/8" ) and the ZT0121 I keep in the truck (3/16" blade) I use the 25 degree. All of my kitchen knives are sharpened at 17.

I bought an Edge Pro Apex 18 years ago. Sharpens just about everything. Expensive but over the years it holds up. Can do serrations.
Reshape, reprofile the edge with just a little practice and following the videos.

Not for everyone, is expensive and to each his own choice. Lansky and others are great also. Can buy new stones and strips as needed fairly cheap.
