Would a marlin 45-70 be too much rifle for white tail
No it would be just fine, I have been using 350 gr hollow points for years on blacktail. The leverlution from Hornady is a good choice as well.
It'll work just fine. It won't make them too dead, if that's what you're wondering.
That caliber will just about quarter them, skin them and create sausage for you. It works better for ELK, or buffalo, since it really can destroy a large amount of meat unless you do a neck or spine shot. I second the recommendation for the Hornady Leverlution ammo, its very effective and adds some range to your rifle, maybe another 50 yards or so.
