    Cut the rind off a pork belly

    Use this stuff

    Spread the Salt, Cure, and Pepper

    Put in a vacuum seal bag and pour in some real Maple syrup and seal

    Put it in the fridge and turn it over once a day for 7 days.

    Yes I am going to smoke it, I haven't made a plan on how long and how hot to smoke it yet but I still have a few day to make a game plan.

    The bacon gun is interesting but I am more interested in how the bacon turns out. I have had customers who were in the bacon ofthe month club!
