If meat is so terrible why do vegans try to make their tofu like it?

Because some realize the ecological devastation caused by raising meat producing animals and do their best to avoid consuming the products but still enjoy the taste? I'm a major carnivore but mostly game meat, commercial large-scale meat production is helping destroy our planet.

Because it is really difficult for many to get outside their existing food repertoires, so analogs to known foods (like tofu dogs, tofu 'lunch meats,' et cetera) fit readily into their daily eating routines.
