I've been on this forum for years, never scanned down far enough to find the section on knives

now that I'm retired, I have the time to spend on my blades, axes, saws, utility knives, fighting knives and my favorite - kitchen knives

just ordered a Kyuto chef knife from this shop in Portland - pick it up Monday


debated between the Kyuto and the Santoku for a week

Why not get both?
I use both types of blades regularly, a Wūsthof chef and Henckels santoku.
a good Santoku will be my next purchase - for now I have a Walmart Santoku I do use daily

haven't decided on which knife maker yet

have a friend who is a professional chef that swears by his Warther knives
