I read an article by the cheif mechanic for the film who described the various mods they made to get the cars to perform the way they did; truth was the Chargers could run away from the Mustangs and took fewer mods in the frame.
(They built and wrecked several of each in the making of the chase).
You see filmmakers trying to beat that chase even now and I'm not sure if anyone has, yet.
My buddy lives down the street where they shot that opening car scene, to this date, nothing's changed except for more traffic and SFPD can't chase you.
