Elote! Mexican style corn on the cob

    Coat with mayo, sprinkle with cotija or parmesan, chili powder, garlic salt and pepper. Best roasted in the husks over charcoal.

    I absolutely love eating corn that way, parmesan has never been better.

    Well, I am not much of a mayonnaise person but I was making corn on the cob tonight and thought "what the heck". Followed the description above and found I really liked it. A little experimenting with spices and we will see where we can take this. I want to try cotija cheese on it also...Thanks for sharing...
