Crab Cheddar Melt

1 can lump crab
1/4 cup chopped onion
1/4 cup cream cheese
Spice to taste
Topped with sliced extra sharp cheddar

Yes, English muffins. My son made the cutting board for me in shop class.

Another version is mixing some old english cheese with crab to taste. Put the mixture on English muffin halves that have been lightly toasted. Put a slice of tomato on top with a piece of cooked bacon on that (bacon optional). Bake at 200 degrees until eveything looks good. You can cut in quarters after they come out for parties, or eat 'em up as is. Delicious.
