The February, 2014 issue of Consumer Reports has a great article on chicken. It is worth a read.

Some highlights:
  • 97% of the chicken breasts they tested harbored bacteria that could make you sick.
  • Put chicken in a plastic bag at the store to avoid spreading any juices from the packaging.
  • Be vigilant about safe handling, preparation, cooking, and knowing and cleaning contaminated surfaces. This may include having two cutting boards to prevent cross contamination.
  • Washing the chicken before cooking can spread bacteria beyond the sink.
  • Think about paying more for chicken without antibiotics.

A co-worker was in the poultry business for several years. He only eats Foster Farms. After all the horror stories he has told me I'm surprised he eats chicken at all.
