Any cooks on here make deer/elk sausage?

I recently made some breakfast sausage from a pork shoulder and it turned out really good. This hunting season, if the stars align, I should get an elk. Does anyone have a favorite recipe to share?

P.S. I used Alton Brown's recipe for the breakfast links and a kitchenaid grinder to do the dirty work. Highly recommend it.

I have pink curing salt #2, a kitchen aid with sausage stuffer attachment.... just need some casings.. maybe this weekends project?
