About to make some homemade sausage. Any have a favorite recipe ?

i have a Cuisinart mixer with the grinding attachment. I have some Pork Sirloin tip Roast, some ground Beef, ground Turkey, and some chicken breast. I have a good selection of herbs and spices.
Gimme some ideas.

I have made Italian sausage and breakfast sausage in the past. Those are awesome but I like to mix it up.

I like that, thanks! i'm going to try and make at least two types. I kinda want to try and make a cheddarwurst. I love that stuff. I want to start using fresh ingredients from the garden as soon as I see more yields. We're already eating radishes we planted 6 weeks ago.
