I've adopted a strategy with "completion" dates (either for work or delivery of merchandise) of advising they "shoot high" on their estimate. When they come forward with it, I advise I'm adding two weeks (so "I'm not disappointed").
I'm not sure if it's ever really worked, but it sure makes me feel better, and I hope the "two deadline" strategy (theirs and mine) creates a bit more pressure.
And a staunch rule I adhere to simply because I have deep respect for the work they do that I don't have skills for, I NEVER rush:
1. A Gunsmith
2. A Taxidermist
3. A Mechanic
4. A Saddle Maker
5. A Farrier
6. A Veterinarian
Maybe more skilled professions, but with each I will tell them "If someone's in a hurry, put them ahead of me."
Because the only worst thing than rushing them that you can do with such providers is to piss 'em off, and GOOD ones are damned hard to find.
