    Wouldn't you just cook it like any other meat?

    I haven't made any chorizo with venison... there's as many different recipes & styles for chorizo as there are Abuelas... Argentine style, Mexican style, Spanish...

    Here's some sites which have some good recipes:
    Len Poli
    www.sausagemaking.org :: Index
    Polska Recipes

    The biggest concern I'd have is fat/lean ratio... can always use porkfat. Enjoy!

    Awesome!! Great info, thanks! Now to hook it up and throw in in a Quiche! Anyone got some ideas for recipes involving chorizo?

    The Argentine method is simple... Choripan (Chorizo & Pan) aka sausage in bread. Get your grill warmed up with good charcoal, and cook the sausage until its crisp on the outside, and juicy on the inside. Split the sausage, place it on a good roll, throw on some chimichurri or salsa criolla and enjoy!

    Choripan! : Asado Argentina Check out the site for criolla & chimichurri recipes.

    btw, Argentine style chorizo is akin to a Kielbasa in the sense that it is not spicy or overly greasy.
